some like it stuffed

One of Aaron's co-workers has a huge garden, and generously gave us 4 watermelons & a bag of eggplants!  I have to tell you I sometimes get stumped with eggplant. I don't want to always have eggplant parm! Tonight I found this recipe for stuffed eggplant and it was delicious. I thought I would share it with you guys. I served it with a side of rigatoni tomato basil pasta. It was pretty good. Get you some eggplant while it's in season!

oh...sweet salmon

I created this new tasty Salmon dish.  I thought would share it with you. We had a great shipment of wild caught Salmon from Alaska come into our grocery store. This was one of those experiments that went right... and of course I measured with my eye... so hopefully yours will turn out well too.

Oh... Sweet Salmon

4 Filets of Salmon
Lemon Pepper
Black Pepper
Basil

Marinade:
1 Garlic Clove (minced)
1/4c OJ
4 TBS Soy Sauce
1 TBS Honey
1 tsp. Liquid Smoke

-Sprinkle Salmon with Lemon Pepper, ground Black Pepper, & Basil
-In a small bowl mix Soy Sauce, OJ, Garlic, Sesame Oil, Liquid Smoke, & Honey.
-Pour marinade over Salmon, refrigerate for an hour. If marinade runs to the sides of the salmon, continually spoon mixture over the salmon. 
-Grill Salmon. It would be even better grilled on a cedar plank!

i went to a market and bought something in a jar?

I'm way behind on posts! I have been out of control busy, and I know this week will just be a continuation of that. I know that I need to get back on track and start posting about food. I started to think about my wonderful trip to Dallas just a few weeks ago. I went to visit Rebekah GILBERT, Linnae, and to greet our dear friend Melissa fresh from CO. We went to a great farmer's market, antiquing, saw a flick, and just purely enjoyed being with each other! 
One of my purchases from the farmer's market was "chow-chow". Have you ever heard of it? I can't even explain it. I will say it's fabulous and delicious. The first time I had it was at my Aunt & Uncle's house, and we had it served over grilled chicken. I couldn't believe how much I liked it, but I came come with a jar of it fresh from the farmer's market. There is no way I can go into a fabulous grocery store or farmer's market without making a purchase!

they have left the building

I'm sad to say that my girls have officially left for college. Ugh... I'm going to miss them. We are missing a few of them in this picture, but this was our family pic from the "Ultimate Family Feast". I really did eat so much that I felt sick for the next 12 hours, but every bite was slightly worth it! I know that the Lord will continue to work in each of them in completely different ways, and I really can't wait to hear all about it. I will continually pray that they would fearlessly be different at their college campus at LSU, LA Tech, & TCU. I'm so thankful that the Lord put our group together almost 2 years ago. I'm going to miss you guys!

I felt like I had to post this for everyone else or it would have been selfish! Linnae sent this to me the other day, and I finally got around to listening to it. The new Ray LaMontagne cd (‘God Willin’ & the Creek Don’t Rise’) is to come out August 17th. I was able to listen to the album for free through THIS website. Check it out. As soon as I heard ‘Repo Man’ I was in.

6 & counting

You may have read the title at first and said “6 and counting what”? The 6, is the 6 boxes of cereal that I bought at the grocery store in a single visit. Did I mention that it is just Aaron and I? We currently have 8 boxes in our pantry. What the mess is going on? I mean, I love it, obviously, but I think I need to start expressing a little self control. I felt like I needed my snack cereal, my serious crazy protein-fiber cereal, oh yeah, and a box or 2 for Aaron!
Isn’t it funny how we can get focused on the things we enjoy so much that we forget about everything else around us? I’m pretty sure I left the store with nothing for dinner. But, seriously you know what I mean? We let everything around us go to the side, because we truly have tunnel vision. My goal this week is to step away from the tunnel, and take not just a peak on what is around me… but actually walk towards it. Amazing how too many boxes makes you get all philosophical.

so happy together

Oh the relief that we are now only 2:30-3:00 hours away from each other! I'm so thankful and glad that even with our busy schedules that Linnae and I got to spend the weekend together. Don't you love it when your so close with someone you really don't have to explain anything? Or that you can pick right back up where you left off? Well, met us, here it is, and that is how it is. She has truly been one of my favorite people since we met 7 years ago. (What 7 years ago? Ok, that is weird.) I know everyone has one of these, if you don't it just hasn't come yet! So, get excited about it when it does. Basically, we had a great time, and can't wait to see you again in just a couple of weeks in Dallas!
