We had a great Christmas this year and got to see most of our family, which was the biggest treat for us. There were 5 dogs total at my parents house, which left four of them much like this after a hard day of play

A few months ago I made this little sign. Our formal dining room just need more of a personal touch. If you know me... you know I love to say ,"love me some Jesus", because it's clearly true I do, but it is also just a little something I like to say.

I got clever with some paint, an old plank board, and some braided twine and here you have it. I figured no sense in paying someone else to do your idea for you! Hope you and yours had a very blessed and Merry Christmas.

I have been a terrible blogger for months now. I’m trying to get back on the train. Thanksgiving, along with my Birthday, all came in a fast forward motion was last month. We spent time with family and friends, eating, and ran a few races (or maybe just I did).

Nevertheless, my family was very sweet in making my Birthday special, even those that are miles and miles away. One thing that I felt like I can to share with you was a new recipe… (surprise, surprise). My Aunt Margaret gave me this wonderful cookbook, which I found myself completely immersed in, BabyCakes Covers the Classics. My first product with a few adjustments was her granola recipe. A girl needs variety in the GF cereal department! Even if you’re not GF you will enjoy this. Put over yogurt, frozen yogurt (or in our house now Yonanas, thanks Mom), with fruit, or plain for breakfast. So, here ya go, I toast a full bowl to you!

GF & Vegan Free Granola
4 cups GF Oats or Old Fashion Oats1 tsp Salt
1 Tbsp Cinnamon
1 tsp Ground Ginger
1 ½ cups Unsweetened Coconut
½ cup Pecans
½ cup Almonds
1/3 cup Sunflower Seeds (unsalted)
½ cup dried Cranberries
½ cup dried Blueberries
1/3 cup MELTED coconut oil… or Canola Oil1/3 cup Agave Nectar
-Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
-In a medium bowl, combine oats, salt, cinnamon, ginger, coconut, pecans, almonds, seeds, and berries and mix together.
-Add Oil and Agave to bowl, and mix well together.
-Pour mixture on baking sheet(s), spread, and bake for 15 min.
-Give the mixture a stir and continue baking for 10-15 minutes more. Remove from the oven and allow to cool.
-Store granola in a covered container. (I use a Tupperware container).
Also, if you haven’t heard of Yonanas it’s amazing. Makes your own GF/Lactose Free frozen yogurt. It’s pretty amazing… tastes just like ice cream. Seriously. I love having this granola on top!

There has been quite a bit of experimenting in the baking department of our kitchen these days. I have to be honest; I think this might very well be the best tasting Chocolate Chip Cookie I’ve ever had. I’m soft bake kind of girl, so if that’s not you… well you probably won’t enjoy it half as much as I did. So sit outside, enjoy the fall air, bite into one of these cookies, and it will make you raise your glass of cold milk!

Chocolate Chip Cookies (Gluten Free, Vegan)

•2 1/2 cups Blanched Almond Flour

•1/2 teaspoon Celtic Sea Salt

•1/2 teaspoon baking soda

•1/2 cup grapeseed oil

•1 tablespoon vanilla extract

•1/2 cup agave nectar

•1 cup dark chocolate 73%

1.Combine dry ingredients in a large bowl.

2.Stir together wet ingredients in a smaller bowl.

3.Mix wet ingredients into dry.

4.Form 1/2 inch balls and press onto a parchment lined baking sheet.

5.Bake at 350 degrees for 7-10 minutes.

6.Cool and serve.

In the summer of 2006 I lived in Nashville, TN working at CMT. As many people know I don’t really listen to country music; I leave that to Aaron. So, when I would have an embarrassing moment with a musician in the elevator or have them around my desk, I would be completely reactionless. I couldn’t recognize anyone. I was probably the ideal candidate for the job; a clueless 20 something, that would do whatever my boss told me to do, and didn’t care about country music. But seriously, great job, great people, great experience.

On my lunch break one of my favorite things to do, was to walk down to Hatch Show Print. I’m pretty sure I went once a week. I have a problem; I love music/concert posters. That summer, I brought 4 home. I still have them on display in our office at home with one of Aaron’s guitars hanging in front of them. I think soon we will have to add this one for Aaron:

July was the month of visitors. Aaron and I loved having friends and family in town. Now that we are officially in August without a break from triple digits, I'm counting down the days till fall! However, I can't bare the thought of looking at a pair of jeans or boots right now.

With that in mind I found these amazing sandals the other day. I know that Sseko might be old news to some people, but it was totally new to me. I love what they're about and I love the teal and pinafore color! Just a bonus, you get one pair of shoes and can wear them 6 different ways. the salad of the summer

When I make a salad for dinner, it has to pretty special to wow Aaron. We have salad every night with dinner, so salad as a main entree needs to have a little pizazz. I found this recipe and added a few extras, and it was delicious. You have to try it!

Grains & Fruit Summer Salad

Ingredients:
¼ cup lemon juice
1 cup lightly packed fresh basil
¼ cup olive oil
4 cloves garlic, minced
2 cups cooked grain (quinoa, wild rice and/or brown rice*, I used brown rice)
½ cup sliced green onions
4 cups mixed spring greens
2 cups blueberries (9-10 oz.)
1 cup cantaloupe cubes (I hate cantaloupe…so I omitted.)
1 cup yellow or red cherry tomatoes, halved
½ cup of red pepper* I added
½ cup of orange pepper* I added
1 small zucchini, cut lengthwise in narrow ribbons
½ cup walnut pieces, toasted
4 oz. smoked salmon, flaked (I cooked 1lb. of Sockeyed Salmon)
¼ cup snipped or shredded fresh herbs (dill, basil, and/or mint)

Directions:
1. For basil dressing, in a blender or small food processor combine the 1 cup basil, lemon juice, olive oil, garlic, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Cover and blend or process until nearly smooth,stopping to scrape down sides as needed; set aside.
2. In a medium bowl stir together cooked grains and green onions. Stir in about 2 tablespoons of the basil dressing to coat.
3. For the salad, line a large bowl with greens. Top greens with grains mixture, blueberries, cantaloupe, tomatoes, zucchini, pepper, walnuts, and salmon. Drizzle with half the remaining basil dressing; toss gently. Sprinkle with fresh herbs. Pass remaining dressing.

This weekend I was what some of you may call… “a baking fool”.

Thanks to Linnae’s sister Sara, my world of living G-Free has been quite enjoyable. Almond Flour, people, God Bless it! Some of you know I eat the same thing every day for Breakfast and Lunch. I have been able to still swing my 2 bowls of cereal; it just isn’t the same old favorites, and a sandwich. Now, the sandwich has been the most depressing of all. I have hated every GF bread known to man. They all crumble, taste like mushed up rice, and/or not filling. Until, Sara shared this beautiful thing called: Almond Flour. I have made some of the most delicious bread I have ever had and some amazing crackers. Thanks to Elana!

I’m not sure why, but Aaron thinks I make amazing Pizza. I haven’t made it in over 2 months, and thanks to my sweet friend Martha, I had a great recipe to try for myself. For those of you who are trying to Low Carb it or are GF you really should try it; I was pretty pleased with it. I just couldn’t look at Aaron’s too long! Hope you can enjoy!

Cauliflower Pizza Crust

Well I have had to get creative at times in the G-Free department lately, But I have really enjoyed being creative and cooking new things. This weekend I made some delicious homemade herb crackers. Um… they were pretty awesome! Now that my new kitchen is stocked I’m ready to roll.

I’m really looking forward to starting to make my own bread this weekend. That might be sad that I’m looking forward to that, but I really am. Here is a great recipe I got for using Polenta, and I paired it with a homemade pesto Salmon that was quite tasty. Enjoy!
Grilled Polenta with Tomatoes and White Beans

Ingredients:

1 (17-ounce) tube of basil and garlic flavored polenta, cut into 9 slices
Cooking spray
2 tsp Olive Oil
2 cups halved Grape Tomatoes
2 Garlic Cloves, minced
1 (15-ounce) can Cannellini Beans, rinsed and drained
1 TBS White Wine Vinegar
1 1/2 tsp chopped fresh Rosemary
1/4 tsp freshly ground black pepper
1/2 cup (2 ounces) grated Parmigiano-Reggiano cheese
Rosemary sprigs (optional)

Directions:

1. Heat a grill pan or nonstick skillet over medium-high heat. Coat pan and polenta slices with cooking spray. Place polenta slices on grill pan or skillet; cook 2 minutes on each side or until golden brown. Remove from pan; keep warm.

2. While polenta cooks, heat oil in a large nonstick skillet over medium-high heat. Add tomatoes and garlic to skillet; sauté 4 minutes or until tomatoes soften and garlic is tender. Reduce heat to low. Stir in beans and next 3 ingredients. Cook, stirring constantly, 2 minutes or until thoroughly heated.

3. Place 3 polenta slices on each of 3 plates. Spoon tomato mixture evenly over polenta, and sprinkle evenly with cheese. Garnish with rosemary sprigs, if desired

We had a wonderful last week. My brother got married and then Aaron and I had a quick trip to Maine. Unfortunately, I didn't get my camera out once at the wedding. Not sure what I was thinking. I will say that Aaron and I did love the photo booth that they had. That was the only photo that I brought home! I can't wait to see their pictures.
Maine was absolutely amazing. It has been a dream to go there in the summer, and we did it! We stayed in Freeport, ME just 30 minutes outside of Portland. We drove to different towns on the coast, and every single one of them was beautiful! A little preview...

i grew a pizza

This was one of those moments that I really wished that I could have eaten what I was cooking. Last night I made Aaron a Garden Grilled Pizza for dinner. I made this last summer, but this year everything was from our garden! I basically made an almost free pizza (minus making my own whole wheat crust and store bought cheese). If you have a surplus of veggies that you don’t know what to do with, try this recipe.

Summer Squash Pizza
1 teaspoon olive oil
1 teaspoon balsamic vinegar
1/8 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 medium zucchini, cut lengthwise into (1/4-inch-thick) slices
1 medium yellow squash, cut lengthwise into (1/4-inch-thick) slices
Cooking spray
1 (12-inch) packaged pizza crust (I personally, like to make my own)
2 plum tomatoes, cut into (1/8-inch-thick) slices
1/4 cup (1 ounce) finely grated pecorino Romano cheese
2 tablespoons thinly sliced fresh basil
1/2 teaspoon finely chopped fresh oregano

1. Prepare grill.
2. Combine oil, vinegar, salt, pepper, zucchini slices, and yellow squash slices in a large bowl, tossing gently to coat. Place squash mixture on grill rack coated with cooking spray; grill 2 minutes on each side or until tender.
3. Reduce grill temperature to medium.
4. Lightly coat pizza crust with cooking spray; grill 1 minute on each side or until lightly toasted. Arrange zucchini and squash over crust. Arrange tomatoes over squash; sprinkle with pecorino Romano cheese. Grill 5 minutes or until thoroughly heated. Remove from grill; sprinkle with basil and oregano.

My brother gets married this weekend and we leave for our trip to Maine. We are so excited about both that we can barely stand it! It should be interesting packing for 2 different places with temperatures in the 90s and another in the 70s. Sounds like outdoor heaven will quickly be approaching.

Some things that are must do’s on our list in Maine are: Relax, Eat lots of Lobster, Whale Watching, Hiking, Kayak or Paddle Board, Learn to Fly Fish, See Light Houses, Get a picture of a Puffin, Bike Rides, and Have Amazing Runs. Looking forward to all of the fun festivities!

sometimes its easier to buy than make

I saw something like this at Anthropologie.

So, I thought, ‘please, I can make those garden markers’, remember this thought. After I drove around to different antique and thrift stores I finally found some spoons. Who knew it would be such a challenge. The good thing was they were old Army spoons that were used in the military. (Free added character.) Well, that was only the beginning.

I hammered the mess out of these guys for two days; someone should have mentioned in a tutorial that you need silver spoons! Then I purchased 2 different metal stamps and had no luck, because the spoons weren’t real silver. (ugh) So, then I got clever with what I had. I stamped each halfway flatten spoon with the plant/veggie/herb’s name on it, and then sealed them.

I think they came out ok, and Aaron loved them. That was all that really mattered. They weren’t spot on fruit or flowers marking 4 years, but it was for your fruit and flowers. Kind of a stretch, but it worked!

I'm happy to say that Aaron and I are 4 years and counting today! Aaron and I aren't very traditional people, but when it comes to anniversary presents we are. We do the whole traditional gifts that match the year. For year 4, it's fruit and flowers. I can't really share what Aaron is getting from me yet, but I will say I had a fun Edible Arrangement that looked like this at the office today! I had to move the shelfs in the fridge to make it fit, but I have never been more excited about seeing a delivery man! I can't believe how lucky I am to be married to someone like Aaron. I thank the Lord for him everyday (ok, i'll save the mushy stuff for him).

As many of you know. I have become Gluten Free. Not by choice...trust me. I can very easily sit and mourn over the things I love that I will no longer be able to eat, or I can rejoice in how well I feel. I think I’ll go with the second one! I have had to use some creativity in the kitchen; while at the same time try not to deprive Aaron from things.

Now that we have this huge garden, I have a major surplus of veggies exceeding what two people can eat. I have had to get creative in making squash and zucchini more than 5 ways! Last night I came across this recipe for Zucchini Patties. At first I thought, “terrible name and sounds gross “, but good thing I pushed those thoughts aside. They were delicious! Try them out and let me know what you think. ( I paired mine with grilled chicken and salad.)

Zucchini Patties

Ingredients

• 2 cups grated zucchini

• 2 eggs, beaten (You could use 1 egg & 1 egg white)

• 1/4 cup chopped onion

• 1/2 cup all-purpose flour (GF- I used a crumbled up slice of brown rice bread.)

• 1/4 cup grated Parmesan cheese

• 1/2 cup shredded mozzarella cheese

• salt & pepper to taste

• 2 tablespoons vegetable oil

(Adding fresh basil & sundried tomatoes...would be delish to this too.)

Directions

1. In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan cheese, mozzarella cheese, and salt. Stir well enough to distribute ingredients evenly.
2. Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.

Oh how I have lost track of time! We had a great Memorial Day weekend with the Carters. This has been a really funny and special tradition for us for the past 3 years. Luckily, they don’t mind making the drive to see us. We had so much fun, but I didn’t take as many pictures as I had planned! That is ok though, because some of these are pretty priceless.

We are for real going green. Last year Aaron planted our first garden, but this year he really worked his fingers to the bone. The garden is in this separate fenced in area next to our house; I think the people that lived there before us parked their ATV’s there. You can’t really see in these pictures, but he leveled it all out, put weed paper down, laid flagstone all around the garden, made the garden box, planted the veggies & herbs, & built a sprinkler system (that uses rainwater). What in the world! That is a lot of work. We picked our first squash this past weekend, and I can’t wait to enjoy the rest of veggies. We are growing: cilantro, basil, rosemary, cherry tomatoes, 2 other breeds of tomatoes, bell peppers, squash, zucchini, jalapenos, and cucumbers. I’ll keep you guys in the loop about all the yummy stuff we are cooking up with our home grown goods!

This past month was extremely busy! I’m really thankful for that, but really looking forward to staying in Shreveport this week. Last weekend I got to see one of my best friends get married in Athens, GA. Since I flew into Atlanta I was maxed out on carry-ons, so I didn’t bring my camera (ugh). Hopefully I’ll get some pictures from people, and share those with you so you can see Katie Blair become Katie Smith!

I have a slight new adventure. I’m hoping this is temporary, but so far it is working so it might end up being permanent. I’m finally going gluten-free (sigh). After years of stomach issues and lots of encouragement from my sister, I’m bucking up and saying farewell to all the things I love to eat! For example: Kashi, Honey Wheat Pretzels, Pasta, Tacos, Cupcakes, Pita, Granola bars ... I'm going to stop now. A friend pointed out to me, my Blog title might have to be changed to “alottacereal the gluten-free version”! Praise the Lord that they make gluten-free cereal! (I’m so not kidding that would have been a huge issue.) I did make this Chickpea Salad for myself yesterday, and it really was tasty. I’m trying to get really creative, so I don’t burn out on certain foods. I wish I had added avocado, so try adding that. Here is my little invention.
Chickpea Salad
-1 Can of Chickpeas (Rinsed & Drained)
-1/4c Diced Red Onion
-2tsp. Minced Garlic
-Dash of S&P
-Dash of EVOO
-1/2c Sliced Cherry Tomatoes
-2TBS Chopped Cilantro (grown from our garden…I know, you’re welcome)
-1TBS Lemon Juice
-2tsp. EVOO
-1TBS Grated Parmesan
-Pepper to Taste
Sauté Onion, Garlic, S&P, & EVOO. Set aside & cool. In a small bowl mix all ingredients along with Chickpeas. Chill for at least an hour, and then you’re ready to serve.

This weekend I read a short great read that I think you guys would love, Brennan Manning's The Furious Longing of God. Pretty easy to understand, it's about God's intense, consuming love for us. It has no limits and no boundaries. My favorite chapter was on healing, which also led me to my favorite question/thought from the book.
"The question is not can we heal? The only question, is will we let the healing power of the risen Jesus flow through us to reach and touch others, so that they may dream and fight and bear and run where the brave dare not go?"
I know, awesome. Right? Literally finished in a few hours. Please remember I'm not a big reader. Pick it up!

A couple of weeks ago I had a serious craving for hummus. (Clearly I’m trying to cut back on my peanut butter intake!) I came across this great recipe for Roasted Red Pepper Hummus and it was delicious! It lasted maybe 3 days at our house. Give it try. Seriously, hummus is easy to make, promise you can do it!

Roasted Red Pepper Hummus

Ingredients:
16 ounces chickpeas
6 ounces roasted red bell peppers
1 jalapeno, seeded, diced
1 tablespoon chopped garlic
3 tablespoons chopped cilantro leaves
1 teaspoon paprika
3 tablespoons chopped onion
1 teaspoon freshly cracked black pepper
1 tablespoon chipotle pepper in adobo
1/4 cup extra-virgin olive oil
Toasted pita bread, for serving
Directions:
Mix all ingredients, except olive oil and pita bread, in food processor until pureed, then slowly add in olive oil.

Let set up for 1 hour prior to serving. Serve with toasted pita bread.

Well, it's official I'm a terrible blogger. I have recipes to share, great trips to Marietta to celebrate/shower my friend Katie getting married, a retreat to NOLA, and finally finishing a good book. The pollen has painted it's yellow self all over Shreveport... including my sinuses, and I can't get enough of all of the azaleas in bloom!

My dear friend and mentor suggested to me to read this book, "Same Kind of Different as Me". In the beginning of my vision/desire for Urban YL in Shreveport, she told me, 'remember that anyone, no matter how they look or where they are from, you (I) can make a difference in peoples lives. All we have to do is look around, and the Holy Spirit will point us to them. Don't ignore who He puts in front of you', and then she handed me this book. She thought I would enjoy it, and of course I did! What makes it even more appealing, it is a true story based on a town less than an hour from Shreveport and in Houston, TX. If you're looking for a good read that you'll probably fly through, a story of God's grace, a testimony of spiritual awakening, and a reading of lives transformed... you'll enjoy this book. Maybe this is just time for those of you that still have a Spring Break! Happy reading!

Sometimes I think the Lord calls us to places that are a bit uncomfortable, but if we would just go where He has called us, He will provide the comfort. I have been on staff with Young Life for only a year, but I have already felt an overwhelming sense of those feelings.
Recently, the Lord has made a particular community heavy upon my heart. Within this community there are a few homes with no running water or electricity, a playground, a “convenient store”, a few churches, high crime, and of course… a high school and a middle school. It took me a whole day to really process the faces, the homes, and the schools I saw. I wept the next day as the Lord told me, “You can’t change their circumstances. You can’t go in and think you can fix and clean up everything. It’s generational. BUT, you can bring them to ME.”
Our area has felt called to start Urban YL, and even though nothing has been set in stone, I feel like He is calling us there. Ironically, this community is referred to as the “Bottoms”. A couple of days ago I was sharing this with a new friend of mine and she brought to my attention, Matthew 20:16, “So, the last will be first, and the first will be last.” I truly believe that He has called us to the Bottoms (or the last) so we can bring Him to them (so they will know Him first).
I share this with you, so you can join me in prayer. Please pray for the development of Urban YL in Shreveport, so more kids will come to know Jesus. To some this may not make sense or may sound unsafe, but I pray that your heart would break for these kids and this community as it has mine.

This is my sweet girl Biscotti… in her favorite pose. I ordered her this new collar, that she is wearing, and I had to share the website for all you dog lovers out there. After many trips to different pet stores, I said, “forget this I can’t find anything I like”! So, I did the online search, and found this store on Etsy. Now, don’t hate on the name of the store, because their collars and leashes are super cute (I found 5 different ones I wanted to buy) it’s called: Big Doggy Bling. Check them out for yourself, and look at how much Biscotti loves hers!

Happy V-day! Oh the day of love. There are a few things that I really do just love. I figured that I would just share some of the things that I really am… just “loving” right now. This is totally excluding the obvious things… Jesus, my family, crushed ice, 70 degree weather, running, or even a great concert. You get where I’m going. So here are my top 5 things that I truly am loving right now.

1-Aaron got me these Toms for Christmas. They are currently on my feet, because it’s 70 degrees!

2-Garlic Expressions Salad Dressing. Ok, for real, this salad dressing is awesome. You can only find it in the produce section at your grocery store. One of my dear friends/YoungLife girls has this as a staple at her house. It will change salad for you... and you probably won't be kissing anyone afterwards!

3-I love me a hair accessory. Now, I don't own these...but oh how I love them. I have my eye on you Brocco Bobbies from Anthropologie.

4-Smashed Sweet Potatoes. I mean I had to give a recipe. I made these up, but I think you'll really enjoy them.

Smashed Sweet Potatoes

4 Sweet Potatoes (washed & cooked—fastest microwave)

1 ½ TBS Cinnamon
2 TBS Brown Sugar
Dash of Nutmeg
Dash of Thyme
¼- ½ c of OJ
2 Tsp. Maple Syrup
2 TBS Butter

I left the skins on and cut the ends off of the potatoes (this is all to your taste). In bowl mash the potatoes and add the remaining ingredients. You may want to serve this with extra butter and brown sugar on the side if someone wants to add a little extra.

5-The song "Beautiful Exchange" by Hillsong. Continues to rock my world everytime I hear it. For a few weeks now, I have had to play it at some point during my runs. I have been a hot mess singing it, and I just can't get enough of how powerful the lyrics are. You should really listen to it if you haven't heard it. It will be a wonderful break of 10 minutes of worship that you'll be thankful you took.

At church we’re studying the Book of John. In a nutshell, I have really enjoyed it. I feel like every time I leave, I leave challenged and excited. There was a verse that Tracy (our pastor) shared very briefly, but I am still in amazement of it. The Lord has been showing and literally knocking me off my feet about this. (Or maybe on my feet… you’ll see what I mean.)

“How, then, can they call on the one they have not believed in? And how can they believe in the one of whom they have not heard? And how can they hear without someone preaching to them? And how can they preach unless they are sent? As it is written, ‘How beautiful are the feet of those who bring good news!’” – Romans 10:14&15

When I go back and read this, I find myself like a deer in headlights. If… if I don’t say, “Lord send me! I’ll go.”, then I would just sit here comfortably and never dare to push myself outside of my comfort zone. Never go out of what people consider to be normal. Honestly, I don’t think there is anything normal, comfortable, or fuzzy about sharing the Gospel. People have scars, they have things hidden or masked, they have a story, they don’t want to be a mission… they want to be known.

So, as I look down at my feet… (sigh…they are in desperate need of some sort of pedi), I see a scar, blisters, chipped nail polish, bunions, and I’m flat footed. (Don’t you want to be the one helping me at the shoe store!?) However, I can run on them, I can stand firm on them, I can climb over mountains on them, they are tough, and they take me where I need to be. Notice, how I said, “where I need to be”, because see, I have finally stood before the Father and have said, “Lord send me! I’ll go.” To our eye my feet may look rough, but they have been transformed. They have been healed. I have been given the right shoes to wear on them. Not to cover the story they tell up, but to equip them for their journey, so I may go to share the good news.

Well, there is too much to catch up on. I have been out of town for a week at YL's Sharp Top Cove in Jasper, GA taking counseling classes. I would love to share all about it, but that is more of a phone conversation than a post! (You probably get what I mean, and yes we got snowed in if you were watching the news. And I packed like I was in Louisiana... not my best move.)
Anyway, this weekend I really tried to relax, and tried not to be "busy". As many of you know... I'm not very good at not being busy! However, a weekend of rain is usually God's way of telling me I really need to relax. So, I did, but I also worked on a little fun project that I've been meaning to do. Here are my little creations that I made as it poured outside. I was inspired by some buttons I found at an antique store. Hope you like.

We had a wonderful Christmas with Aaron's family in Chattanooga, TN. I couldn't believe it, but we had a very white Christmas! This was my first white Christmas, and I just kept feeling like I was in the movies. There were moments that I was singing, David Gray's "Slow Motion" in my head. If you need to.. sing along as you get to see a sample of our wonderful Christmas. "life in slow motion, somehow it don't seem real, snowflakes are falling, I'll catch them in my hand..."

Oh how I love Christmas! I have been listening to Pandora’s “Swingin’ Christmas station for almost 10 days straight now. I made Biscotti on Saturday, Christmas parties are happening, I’ve been wrapping like crazy, and my hands are old lady dry! Nothing says Christmas quite like that.

I love Christmas cards, love receiving them, love giving them, love displaying them. However, displaying has been a little more challenging this year. I couldn’t find anywhere to display them. I looked through some magazines and stole this great idea.

I put this little display in our window that looks through our Kitchen to the Den. It has been great seeing many of your faces as I wash dishes. Just thought I would share this idea if you need a way to display those fun photo cards you receive at Christmas. Mine has ornaments tied to the bottom... I think that looks better that way :). This weekend was so great. Got to see Martha run her first marathon… which she totally dominated and I was able to jump in and run half of it with her. I just wanted to take a moment to thank each of you for partnering with me in prayer and/or financially. You have played a very important role in my ministry with Young Life. Our banquet last week went amazing! We kept asking ourselves, “Why is everything going so smooth?!”, then we kind of laughed and realized the Lord was just orchestrating the whole event. I know some of you live far away, and couldn’t be here for the banquet, but I wanted you to get a chance to see what you have been a part of. Doug spent many hours working on this video for area.

I sit here thankful for the 100’s of different students that our area is reaching out to, the dedicated leaders, our selfless committee, and the people like you that pray and give. Thank you again, and Happy Thanksgiving!

Earlier this week I made Pumpkin Ice Cream Pie. It was so delish! In the south I guess this works, because fall is never too chilly. I wanted to share, it's super easy, and something great to have for guest. Let me know what you think!

Pumpkin Ice Cream Pie

Filling:

1 qt. vanilla ice cream ¼ tsp. nutmeg

1 c. canned pumpkin ¼ tsp. salt

½ c. brown sugar Pecan halves for garnish (optional)

1 tsp. cinnamon

Stir ice cream until softened; Add pumpkin and remaining ingredients and mix until smooth. Pour into graham cracker crust. Trim with swirls of pecans. Freeze 4 to 5 hours.

Graham Cracker Crust:

1 ½ cups graham cracker crumbs ¼ tsp. cinnamon

¼ c. sugar ¼ tsp. nutmeg

1/8 tsp. salt ½ c. butter, melted

Combine crumbs with all ingredients. When blended, press into a buttered 9-inch pie pan. Chill until firm.

This is positively a weird yet delicious recipe. I have a pretty good Chili recipe, but I was feeling creative or maybe daring last night. Before you say, “sick”, just know that Aaron had 2 serving and I really enjoyed it, Pumpkin Chili Mexicana. I really want to share this with you so you can try it too. Try it and let me know what you think.

Pumpkin Chili Mexicana

• 2 tablespoons vegetable oil

• 1/2 cup onion, chopped

• 1 cup red bell pepper, chopped

• 1 garlic clove, finely chopped

• 1 lb ground turkey

• 2 (14 1/2 ounce) cans no-salt-added diced tomatoes, undrained

• 1 (15 ounce) can canned pumpkin

• 1 (15 ounce) can tomato sauce

• 1 (15 1/4 ounce) can kidney beans, drained

• 1 (4 ounce) can diced green chilies

• 1/2 cup frozen whole kernel corn, loose-pack

• 1 tablespoon chili powder

• 2 teaspoon ground cumin

• 1 teaspoon ground black pepper
• 1 teaspoon of worcestershire sauce

Directions:

1. Heat vegetable oil in a large saucepan over medium-high heat. Stirring frequently, add onion, bell pepper, and garlic cooking for approximately 7 minutes or until tender. Add turkey and cook until browned. Drain.

2. To turkey mixture add tomatoes with juice, pumpkin, tomato sauce, beans, chilies, corn, chili powder, cumin, and pepper. Bring this to a boil then reduce heat to low. Cover saucepan and cook for 30 minutes, stirring occasionally.

Today I felt like it was finally soup time! I probably really felt that way due to my the sore throat (the one down fall to the seasons changing)! This soup is super easy and healthy. I have to tell it is not as good without the avocado relish topping. That topping makes the soup, promise!

Chili-Spiced Chicken Soup with Stoplight Peppers

SPICE BLEND:
2 1/2 teaspoons chili powder
2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 teaspoon dried oregano
1 teaspoon cracked black pepper
1/2 teaspoon kosher salt
SOUP:
1 tablespoon canola oil, divided
1 1/4 pounds skinless, boneless chicken breasts, cut into 1/2-inch-wide strips
2 cups chopped sweet onion
1 cup chopped red bell pepper
1 cup chopped green bell pepper
1 cup chopped yellow bell pepper
1 tablespoon minced garlic
1/2 teaspoon salt
2 cups fresh corn kernels
1 (32-ounce) carton fat-free, less-sodium chicken broth
1 (28-ounce) can fire-roasted crushed tomatoes, undrained
2 tablespoons fresh lime juice
RELISH:
1/2 cup chopped fresh cilantro
1/3 cup chopped green onions
1 teaspoon grated lime rind
3 ounces queso fresco, crumbled
1 diced peeled avocado
Cilantro sprigs (optional)

1. To prepare spice blend, combine first 6 ingredients in a small bowl.
2. To prepare soup, heat 2 teaspoons oil in a large nonstick saucepan over medium-high heat. Add chicken; sprinkle 1 1/2 tablespoons spice blend over chicken. Sauté 8 minutes or until done; cool. Chop chicken; set aside.
3. Heat remaining 1 teaspoon oil in pan over medium-high heat; add onion, bell peppers, garlic, and 1/2 teaspoon salt. Sprinkle vegetable mixture with remaining spice blend; sauté 8 minutes or until vegetables are tender. Stir in chicken, corn, broth, and tomatoes; bring to a boil. Reduce heat; simmer 15 minutes. Add lime juice.
4. To prepare relish, combine chopped cilantro and next 4 ingredients (through avocado).
5. Ladle 1 1/4 cups soup into bowls; top with 1/4 cup relish. Garnish with cilantro sprigs, if desired.

Oh my. I'm so behind! Fall is an amazing and a busy time of year. Football has started, eating meals outside, wearing jeans, throw on a scarf, leaves are changing, and sip on something hot... it's fall! We have been keeping busy working on the house while doing the day to day life things.
Last week was a little hard and great all wrapped in one. Biscotti had a malignant tumor removed, which of course made us a little sad. It may or may not come back, we are of course praying that it does not return! It made us realize just how big of a part of our family that she really is. I told Aaron that I was going to get her a Livestrong bracelet!
On an uplifting note. Work has been just amazing. The Lord is doing some crazy things, and of course just answering prayers that have been heavy on our hearts. I'm so thankful to be apart of this ministry, and just be a witness to Him doing so many great things.
Tonight, I'll be looking forward to a Pumpkin Chocolate Chip Cookie with vanilla ice cream on top!

It has been almost 2 weeks since my last post. There are many holes to fill with new things I'm learning spiritually- or just having my world rocked in a good way, Ansel Adams gallery, some new recipes, new travels, and new things to look forward to.

I feel like I have been everywhere over these 2 weeks. I've been out of town for work, and then Aaron and I finally took a vacation! Woohoo! It was about time. We went just north of San Diego to a beach called La Jolla. It was pretty much a-maz-ing! I have never been to a place like it. We had a great cottage, ate great food, biked, ran, kayaked, beached it, swam in the 60 degree water, did some local things, & relaxed--I know...surprise...I did it! I just wanted to share a few of our pics hope you can picture yourself there!

One of Aaron's co-workers has a huge garden, and generously gave us 4 watermelons & a bag of eggplants! I have to tell you I sometimes get stumped with eggplant. I don't want to always have eggplant parm! Tonight I found this recipe for stuffed eggplant and it was delicious. I thought I would share it with you guys. I served it with a side of rigatoni tomato basil pasta. It was pretty good. Get you some eggplant while it's in season!

I created this new tasty Salmon dish. I thought would share it with you. We had a great shipment of wild caught Salmon from Alaska come into our grocery store. This was one of those experiments that went right... and of course I measured with my eye... so hopefully yours will turn out well too.

Oh... Sweet Salmon

4 Filets of Salmon

Lemon Pepper

Black Pepper

Basil

Marinade:

1 Garlic Clove (minced)

1/4c OJ

4 TBS Soy Sauce

1 TBS Honey

1 tsp. Liquid Smoke

-Sprinkle Salmon with Lemon Pepper, ground Black Pepper, & Basil

-In a small bowl mix Soy Sauce, OJ, Garlic, Sesame Oil, Liquid Smoke, & Honey.

-Pour marinade over Salmon, refrigerate for an hour. If marinade runs to the sides of the salmon, continually spoon mixture over the salmon.

-Grill Salmon. It would be even better grilled on a cedar plank!

I'm way behind on posts! I have been out of control busy, and I know this week will just be a continuation of that. I know that I need to get back on track and start posting about food. I started to think about my wonderful trip to Dallas just a few weeks ago. I went to visit Rebekah GILBERT, Linnae, and to greet our dear friend Melissa fresh from CO. We went to a great farmer's market, antiquing, saw a flick, and just purely enjoyed being with each other!

One of my purchases from the farmer's market was "chow-chow". Have you ever heard of it? I can't even explain it. I will say it's fabulous and delicious. The first time I had it was at my Aunt & Uncle's house, and we had it served over grilled chicken. I couldn't believe how much I liked it, but I came come with a jar of it fresh from the farmer's market. There is no way I can go into a fabulous grocery store or farmer's market without making a purchase!

I'm sad to say that my girls have officially left for college. Ugh... I'm going to miss them. We are missing a few of them in this picture, but this was our family pic from the "Ultimate Family Feast". I really did eat so much that I felt sick for the next 12 hours, but every bite was slightly worth it! I know that the Lord will continue to work in each of them in completely different ways, and I really can't wait to hear all about it. I will continually pray that they would fearlessly be different at their college campus at LSU, LA Tech, & TCU. I'm so thankful that the Lord put our group together almost 2 years ago. I'm going to miss you guys!

You may have read the title at first and said “6 and counting what”? The 6, is the 6 boxes of cereal that I bought at the grocery store in a single visit. Did I mention that it is just Aaron and I? We currently have 8 boxes in our pantry. What the mess is going on? I mean, I love it, obviously, but I think I need to start expressing a little self control. I felt like I needed my snack cereal, my serious crazy protein-fiber cereal, oh yeah, and a box or 2 for Aaron!
Isn’t it funny how we can get focused on the things we enjoy so much that we forget about everything else around us? I’m pretty sure I left the store with nothing for dinner. But, seriously you know what I mean? We let everything around us go to the side, because we truly have tunnel vision. Oh the relief that we are now only 2:30-3:00 hours away from each other! I'm so thankful and glad that even with our busy schedules that Linnae and I got to spend the weekend together. Don't you love it when your so close with someone you really don't have to explain anything? Or that you can pick right back up where you left off? Well, met us, here it is, and that is how it is. She has truly been one of my favorite people since we met 7 years ago. (What 7 years ago? Ok, that is weird.) I know everyone has one of these, if you don't it just hasn't come yet! So, get excited about it when it does. Basically, we had a great time, and can't wait to see you again in just a couple of weeks in Dallas!

I have decided, officially, that is the year that I have been called to be different. I was reading Isaiah 61 last night, and even though I know that I have been “called to be different”, I have been very timid to really roll with that mindset. Just this morning I decided that I won’t run a full Marathon this year, I will only do half’s. To some of you that seems like not a big deal or why would I want to do another one anyway?! My worth is not found in the things that I “do” and choosing not to do something doesn’t = failure, but rather what I do with the things I believe in really matter. For example, for those that are thinking that is too wordy or doesn’t make sense, my ministry matters, my family matters, fellowship matters, my physical & spiritual body matters. A small step for me to remind myself what I truly get life from. I had told someone the other day, I don’t really need “things” I just need Jesus. Well, here we go, let’s go for it. What will He call you to do this year? I bet it wasn’t in your “plan”, but I bet it puts your “plan” to shame.

National Ice Cream Day!? was… yesterday. Whoops… I missed it! Well, by all means I will celebrate today. I just made an ice cream pie for a meeting tonight in honor or the glorious holiday, and picked up a gallon for later. I have to say my favorite flavors are Mint Chocolate Chip and Coffee. I can’t drink coffee, but I sure can put down some coffee flavored ice cream! How will you or did you celebrate?

Since I have been home, running has not been very easy! Let's just say this morning I started at 6:30am, 85 degrees, 90% humidity, needless to say... a struggle to breathe. Before my run this morning I was really reflecting on some powerful scripture that was given to me over our trip, shout out Niki, Isaiah 62:1-5. One of my favorite parts is when the Lord gives Zion/her (me) a new name. That name being Hephzibah. Hephzibah means "my delight is in her". So, as I'm running to my iPod on shuffle it plays, "None but Jesus" by Hillsong. Fresh in my mind is my new name given to me combined with these lyrics "all my delight is in you Lord". As I'm running I'm so captured by the Holy Spirit that I run with hands raised and singing out loud. I'm sure the builders that I ran by thought I was crazy, but clearly I didn't really care! Oh the feeling of freedom. Its a pretty powerful thing.

My other escape is cooking/creating of course. So, why not do a post on both? Chips & Salsa anyone? Here is my Roasted Tomato Salsa (¡pásatelo)
8 Tomatoes, halved & seeded
3 Garlic Cloves, peeled
1 Sm White Onion, quatered
1 Jalapeno Pepper, halved seeded
1/4 c. Corn
1/2 c. Chopped Cilantro
1/4 c. Corn
3 TBS. Lemon Juice
1/2 tsp. Salt
1/2 tsp. Pepper
1/2 tsp. Sugar

Preheat 500*. First 5 ingredients on baking sheet lined with foil & cooking spray. Bake for 20 min. or until charred; stir occasionally. Remove from oven & cool. Place veggies in food processor, pulse until chunky. Place in bowl and stir in remaining 6 ingredients. Cover & chill.

I almost laugh as I type out that title, but really all it is… is truth. As you guys know last week I was trekking through the wilderness with 9 other girls (including our 2 guides). We spent 6 wonderful days in Rocky Mountain National Park; with really only 1 bad day of weather, millions of stars over us at night, covering 20-25 miles, no shower or deodorant, some patches of snow, about 5 moose, dozens of elk, 3 rams, several marmots, a 40-50lb. pack strapped to our backs, and oh yeah silence!
It was truly an amazing experience. I had an amazing time with these girls and our guides. It’s funny, and a whole other story, how God put our group together. He couldn’t have planned it any better. Each of us walked away with a deeper connection with one another, and I’m pretty sure each of saw the Father in a whole new way.
Its funny how for years I have thought I have known what freedom in Christ really looked like, but really for the first time I know what that is. Better yet, I don’t just know what it is, I’m experiencing it. God did some amazing and powerful things in me that I didn’t even know needed to be done. Here I am thinking, “OK God, equip me, use me to be the leader that these girls need.”, and then I think he laughed, and made it clear to me that He had other plans for me. (sigh) I have been transformed, broken, free from lies I thought were truth, walking in freedom, and (oddly enough) I don’t have to tell myself to breathe anymore. So here I sit writing this plain and simple… not the same.

Tomorrow me and 8 other girls from Shreveport will head out to Rocky Mountain National Park in Colorado! I can barely believe it is already here. I'm so excited about having a whole week of sweet time with Jesus and with these girls. I know it will be a challenging week, so please throw us up on your prayer list for protection, safety, and for God to do amazing things in each of our hearts. I can vividly look back years ago when I went on a similar trip in Canada, YL's Beyond Malibu, and came face to face in my relationship with God and developed even closer friendships. It was such an amazing experience, and I hope and pray that these girls will have a similar experience. Here is a little peek at where we will be!

Earlier in the month we went to Eupora for a wedding and to visit family. We went to Aaron's Grandfathers old barn, and came home with some cool things. One of the things we came back with was a ladder that his Grandfather built and used in the barn. We are going to hang it on the a wall sideways and have these funny pictures hanging from it in colored frames. Our favorite ones just happened to be all of us laughing. Mine may not be the clearest, but I sure do love the ones of these two!

This is why we were laughing... these were harder to keep a straight face, but I still like them. I might have to do something with these... especially Aaron's.

My brother-in-law, Mark, was in Waco for business, and made his way over to Shreveport to see Aaron and I. I wish I wasn't sick while he was here, but it was really great getting to see him. It’s officially the first day of Summer, and I have triple digits in the weather to show for it. I’m constantly hot and wondering if I need to start running at 5:00am. Aaron and I are trying to plan a vacation for just the two of us, and we have no idea where we should go. We know of places we would like to go, but those might not be the most realistic right now, ie: New Zealand. Here are our options… Maine for the Lobster Festival (which we have both wanted to do for years), Jackson Hole, or a beach trip that doesn’t include the gulf coast. Thoughts? Input, please.
I will leave you with an easy Berry Smoothie that I made up the other day.
Berry Smoothie
4 Large Strawberries
3/4 c. Blueberries
1 Banana
4 TBS. Plain Nonfat Yogurt
1 1/2 c. Ice
1/2 c. OJ
1 tsp. Honey

Blend in the blender. You may want to add more ice or OJ depending on the texture you like. I toast to you and triple digits in the temperature!

As you guys know I like to experiment in the kitchen. I came across 2 burger recipes that I have been wanting to try. One was a blueberry burger and the other was a Greek style burger, so I figured that Aaron would be way more interested in the Greek burger! (Probably a good assumption!) I have to be honest... they were very good. I wanted to share the recipe with you so you can give them a try too.
Greek-Style Turkey Burgers
1 Egg White
1/4 c. Bread Crumbs
1 TBS. Milk
2 tsp. dried Greek Seasoning
1/4 tsp. salt
1 lb. Ground Turkey
Top with Greek Salsa & Feta Cheese
-In a bowl mix egg, bread crumbs, milk, Greek seasoning, & salt. Add ground turkey, mix well, and form into patties.
-Grill on a well greased surface.
-Serve on Pita round or wheat buns, top with Greek Salsa & Feta
Greek Salsa
-In a bowl mix 2 TBS. white wine vinegar, 2 tsp. olive oil, & 1 tsp. of Greek Seasoning. Stir in 1 c. finely chopped tomato, 1/4 c. finely chopped cucumber, 1/4 c. finely chopped olives.

Ross & Rebekah got hitched! We had such a great time in NOLA for their wedding weekend. I, unfortunately, forgot my camera! Who forgets their camera for their friends wedding? Well, luckily Rebekah's sisters, Sarah & Jessica, took several pictures. I had to take some of hers and post them so y'all could see how much fun we had and how beautiful Rebekah looked. I'm so happy for them, and thrilled that she will be moving to Dallas!

As you know a few weeks ago our dear friends the Carter's came and visited us. Martha and I went antiquing for a few hours, and she showed me these great books. I have been wanting to decorate with some old books, and luckily I had her extra set of eyes to show these to me. They are old Reader's Digest books. I made a huge purchase of 5 books ranging from 1930's-1980's for... $5! Seriously. They look great on tables or shelves. This is just what a couple of them look like. (You get the idea.)

This past weekend we went to a wedding in Eupora, MS, Aaron's hometown, to see one of his best friends get married. It was a beautiful wedding, and we had a great time visiting friends and family while we were there. Unfortunately, I didn't take as many pictures as I had hope for. One of the neat things that we got to do is go to his Grandfather's house and look around his old barn. I made Aaron sit, and I had to take a picture of him! Probably should have gotten one at the wedding in his tux, but I like this one too!

This post is way over do, but I have not had much down time since this weekend. We had a great weekend with some of our dear friends, Martha & Dudley. They made the drive down from Memphis and we got 3 days with the Carters! We did a little swimming, antiquing, arena football, crawfish boil... you know the usual. I wasn't very good about documenting, but here is a glimpse of the weekend!

A few nights ago we had a very unfortunate situation... nothing for dessert! What a crime. This should never happen , but you know what? I got out the Sweet Serendipity cookbook and tried to see what I could throw together. Luckily for Aaron and I we had had everything we needed to make a frozen hot chocolate. Honestly, it was not half as good as the one I had in Serendipity, but it sure was nice. Let yourself enjoy where hot meets cold!

Frrrrozen Hot Chocolate
6 oz. of your favorite Chocolate
2 Tsp. of Hot Chocolate mix
1 1/2 Tbs. of Sugar
1 1/2 c. of Milk
3 c. of Ice
Whipped Cream
Chop chocolate into small pieces and place it in the top of a double boiler over simmering water, stir occasionally until melted. Add the hot chocolate mix & sugar, stirring constantly until blended. Remove from heat & slowly add 1/2 c. of the milk & stir till smooth. Cool to room temperature.
In a blender place the remaining cup of milk, the room temp. chocolate mixture, and the ice. Blend on high speed until smooth. Pour into a glass & top with whipped cream.

This past week has been crazy busy, but it was wonderful! I passed my Spin certification course, which means I will be a sub to teach at the YMCA, and then hopefully become a regular on the schedule. (I'm taking song requests!) We then headed off to Sharp Top in Jasper, GA in a 12 passenger van with some of our YL College friends. We served all week, made new friends, made new memories, went on a much needed hike, and spent some sweet time with Jesus. Here are just a couple of snap shots of the week.

It has been really hard for Aaron and I to go, Thursdays are typically filled up. However, tonight was free and we were able to go! It was so great; if you live here in the Shreve you must go. This has been a crazy week! We have welcomed 2 of our friends sweet babies into the world this past weekend, ran a race, YL had it's annual Rummage Sale (raised $5,000), and I have been all over the place! The worst part about it I have no pictures of the great things that happened last week/weekend!

Let me start by saying…it was a good weekend! I mean we celebrated Britney’s Birthday, did my least favorite thing… mulch, won some Vietri, and relaxed poolside with Aaron.
Let’s rewind to me winning something. I have never won anything.
I went to the old first job stomping grounds, Lewis’, with Britney because we are both Vietri fans, and the granddaughter of the founder was going to be there. We were told that she, Sara Bellini, would be painting pieces, so we made time and trotted up there. Well, unfortunately her paints were taken into customs, and she was just signing pieces. We did get to meet her, see pictures of her family, tell her how much we loved our pieces, and how we wanted more! There was a drawing for a salad/dessert plate that I have always admired. The line is called Sara’s Flowers- which she created & painted; the details and colors are beautiful.

A few hours later, in mid-mulching, I get a call that I won (Sunflower)! Can’t believe it; I guess Aaron is going to have to add to our collection! (Hey, I would love to have the Tulips!) It really was a great weekend with friends, yard work (I have blisters), relaxing, and time with Aaron. Our first weekend of sun in a while!

I’m not someone who is a big reader. I’ve always admired those people, but if I’m not interested in the first chapter I’m done with you. Even if I am really into a book it seems to take me forever to finish. My friend Angie let me borrow this book, and was like, “I read and thought you would love it”. So, I knocked it out in 3 weeks. I hated going to bed, because I was dying to know what was going to happen next. It’s controversial, it’s Jackson, MS, it’s civil rights, it’s funny, it has amazing detail, and it’s a great story. Movies are filmed here in Shreveport all the time, and everyone always talks about how they've seen people and I never see anyone! True statement. Aaron has seen a few, which is so not fair, he doesn't even care! So finally today was my day.
This afternoon I see my cousin Whitney has posted on Facebook how she has seen Jennifer Garner & Ben Affleck at Starbucks this morning. I was instantly jealous. So, then my dear friend Melissa goes to Starbucks and sends me a text telling me he is there again! I promised one of my YL girls that I would go visit her at the store she works at, right next to Starbucks, perfect opportunity to see if I could catch a glimpse. I DID! I had my first cleb spotting with his 2 daughters! Apparently, Jennifer Garner is in a movie called "Butter" with Alicia Silverstone & Hugh Jackman. Also, Nicholas Cage ("Drive Angry") is here filming a movie too. Looks like I might see more people than I thought!

Meet Lindsay, or as I like to call her, "Carter". We have been dear friends since the 7th grade. The day that she decided to cross over from Simpson Middle School to Mabry Middle. I have some of my very best memories with this girl. Carter has been a runner since before braces, and luckily for both of us my scanner isn't working so I couldn't post any of our amazing pictures from back then! I used to think she was crazy for running more than 5 miles, but then she past the bug onto! This girl has made it! Tomorrow she'll be running in the Boston Marathon wearing an Ole Miss jersey! She has qualified before, but finally is able to actually do it. I'm so proud of her she is going to do amazing. Wish her luck!

Around here the azaleas bloom like the tulips in Oxford... if you've never been to either place that means they're everywhere! I decided to take Aaron on a picnic date in the middle of the week to Norton Art Gallery. Pretty much everyone takes bridal, family, kid pictures there or go walking on the trails there. I'm just glad it's only 5 minutes from our house! I love Spring!

bigger than the universe

I've been doing a lot of examining of my heart. Some things have been interesting, some of have not been fun to realize, at times given me a refreshed heart, and even building knowledge (I know a surprise).

In the Old Testament, it mentions 32 different times, referring to God as the, 'God who took you out of Egypt'. And only 6 times is God mentioned as the, 'God the Creator'. I mean He created... this place that we call Earth, in this thing called the Milky Way Solar System, in this thing called a Universe, & even beyond or outside of that we're not sure what else there is.

Doesn't that seem like a lot?I mean if that is so huge why is He only referred to as 'God the Creator' 6 times in the Old Test?

I started thinking; creating was just the beginning, but the freedom that He willingly and selflessly gave is even harder for me to wrap my head around. Maybe that is why He is the 'God who took us out of Egypt'. That freedom and direction is something we understand, see, wrap our minds around. It's funny how he gives such clear direction, yet now in our selfishness we flee from Him without direction.

My prayer these past few days has been that others would see the freedom that I've been given selflessly from my Savior; that I wouldn't live in 'exile'; I wouldn't allow myself to get trapped. Throughout the Old Test. we see people being sent into exile. Yet, here in the United States, exile isn't just about a location, "exile is about the state of your soul" (Thanks, Rob Bell). The life of freedom is a powerful and unexplainable thing. It's the best gift I've ever received.

This weekend lots has happened... we had a huge Kickball tournament for Young Life, and had over 170 kids show up (a post on that will happen later), my sister is here, which means we laid out and ran... awesome!, Biscotti turned 5 today, had an awesome Easter church service, had a huge fabulous lunch, and an Easter Egg Hunt! All of this equals amazingness! We have made sure to give Christi some true cajun food while she is here; as you can see we have accomplished that!

Church was really awesome. I really realize just how blessed I am to have a church family, and a place I truly love to worship at. I was humbled by the message with the focus being on Jesus' relationship with his disciples, and of course about the resurrection. I have never quite heard an Easter message focusing on that, but it was really awesome! I could sit here and explain... but you might just have to listen to it yourself (Click Here) to really digest it.
It was great having a great big lunch with our family, and of course an awesome Easter Egg Hunt. It was so fun! I haven't done one of those since I was 7! And just to let you guys know Aaron & I got the most eggs! Just sayin' game face Marge came out.

My lil girl turned 5 today. We celebrated with a new stuffed monkey, and a double scoop of yogurt on her food! Thats really all you can do with a dog... they have no clue; even though all week I've been telling her that we have many things to celebrate on 4-4-10! Hope you all have had a very blessed Easter, and have remembered why we even celebrate it.

I know some of you guys started singing Jack Johnson with my post title. My sister is in town for Easter weekend, and I decided that I would make Banana Pancakes for the first time. I thought that I would share my version with you guys if you ever get the urge. I must say they were a hit!

Banana Pancakes
-1 1/2 c. Pioneer Mix
-1/2 c. Skim Milk
-1 Egg
-1 Tbs. Sugar
-3 Tsp. Cinnamon
-2 Bananas (Mashed with a fork)
Mix it all up and throw the batter on the skillet! Smear on some butter and maple syrup... and yum!

I don't know if you guys know very much about Jamie Oliver, but he is a great British Chef, who is also known as The Naked Chef, due to the simplicity of his recipes. Not only is he talented, he is extremely charitable. One of the many things he's gotten passionate about is the school system providing better meals for students in Britain. He started this movement in 2004, and caught the attention of the Britain government. Now he is trying to create the same movement here in the US, starting in Huntington, West Virginia (apparently, it's the most unhealthy city in America). It is truly amazing when you're watching the show, Jamie Oliver's Food Revolution, to see what is wasted, and to see what kids are getting for lunch, and in some cases breakfast too. (Y'all they served the kids pizza for breakfast one day! Seriously?!) I know this seems like a random post, but I really enjoyed the show and wanted to share with you all. This past weekend my cousin Hannah got married. Not everyone can say that they have experience 3 different seasons on their wedding weekend! (Friday 80 degrees, Saturday 60 degrees rain, Sunday 43 degrees snow) It was really wonderful having family in town! Here is a snap shot of the weekend the Nations wedding!

3 half's, 1 full, 4 pairs of shoes, over 700 miles

This is a little delayed, but that’s ok!
In a reflection of the year I have realized that I have purchased 4 different pairs of running shoes, and have ran in 3 half marathons, 1 full marathon, and since August I have ran over 700 miles. Doesn’t that just sound crazy? Running is freedom for me. Free from distractions, alone time, prayer time, singing out loud and not being embarrassed…sometimes I have drum solos, listen to music that you don’t listen to when you’re driving, seeing awesome sunrises & sunsets, great conversations…when you run with friends, looking at pretty houses, and of course a few large bowls of cereal afterwards! Here is some race wraps from the year!

NOLA Half- 1:57 (Kristi (left) pushed me the whole way...while wearing glasses!)

YMCA Half- Time unknown...Rebekah and I got stuck in a line to go to the bathroom and missed the start!

Dallas Full- 4:27(Rebekah and I look like we feel no pain...don't be fooled, RP had to push me the whole way!)

NOLA- 1:53 (This was best I have ever felt; should have pushed it harder...oh well. We all did amazing!)

When we were in Houston we did a little pit stop in Anthropologie. While I was shopping Aaron was looking at all of the furniture. In the kitchen section we saw something very similar to this, and Aaron was like, "I'm making this when I get home". So, we came home and made this. It's super useful, and was a nice addition to our guest bedroom. Maybe you need one too?

this why we've been busy

I wasn't kidding when I said we have been busy. I'm really glad we are now done with some of these major projects so now we can enjoy Spring! Aaron is quite the carpenter, and I just fill in the gaps. Luckily we have been very blessed to have some great friends that have lent their helping hand. Check out the remodels!

This is a bit delayed…but in my next post you will see why I have been so busy! Aaron and I had a very fabulous his and hers weekend. The best part about it is that we were able to start it on Thursday! We both got to see something/someone we’ve wanted to see for the last 10 years. As you guys know mine was David Gray. We headed to Houston on Thursday, we were in the car for 40 minutes and realized that we didn’t have the tickets, but were on our merry way to get there 10 minutes before the concert. It was pretty much amazing! He was awesome and so was his band…opening act….eh…could have done without. They next day was beautiful so we walked everywhere to shop and eat. I love the city. You can just do that, and everything is so much easier. Where we stayed was beautiful, and I highly recommend it if you need a place, the houses around it were amazing and once again could walk everywhere!
Then Friday night Aaron’s dreams were then filled, the Houston Rodeo. That was very out of control. I was freaking out because I had never been that close to a pig before, had never seen real baby farm animals, or seen a huge cow’s water break, or been 3 feet away from a bull with a ring through its nose. I really loved it. We then walked over and saw Toby Keith play. I can’t stand him, but it was all about the experience. We were very surprised to know that Aaron’s work scored him sky box tickets, so we pretty much had it made, and I just took all in how big the arena was. We had an awesome trip here are some pictures of the great weekend! Thanks A!

this japanese magnolia

Everyday after I workout I walk my four legged friend. Right now is the time of year I love to walk her the most. It feels great outside and things are starting to bloom! A few houses in our neighborhood have these Japanese Magnolia trees. They are so beautiful. I wish we had one until I see them shed like Magnolia trees and the mess they leave behind. So, until then I’ll just enjoy other peoples as I walk! Aren’t they pretty?

christmas in march

Around here it really feels like Spring. I’m wearing shorts, running comfortably in tank tops, pulling weeds, house projects, doors left open, windows down, and Biscotti is panting! (The true signs of Spring!) We have been busy bees, and haven’t been able to update this blog! As soon as I get my pictures from race weekend I’ll post them. (Ps- We had an amazing time!) Right now I’m looking forward to finally getting my Christmas my present. This Thursday we head to Houston to spend the weekend at the Hotel Derek and go see David Gray! I’m so excited; I’ve been looking forward to this since December 25th and it’s finally here! I love his new album. You should for sure check it out! I’ve listened to him since my sophomore year of High School, and have never seen him live before. So, glad that we’re about to change that! Only 2 more days!
